The secret is soaked cashews blended smooth, standing in for the cream and butter, plus a hit of kasuri methi for that unmistakable restaurant aroma.

How to make vegan butter chicken
- Rehydrate & marinate. Pour hot vegetable broth over the soy chunks (or water + 1–2 tbsp vegan “better than bouillon”) and soak 15–20 minutes. Drain and squeeze well — rinse with cold water if they’re too hot to handle. Mix the marinade, coat the chunks, and refrigerate overnight (or at least 1 hour). Soak the cashews in water too.
- Sear. The next day, pan-fry the marinated chunks in 1 tbsp vegan butter or oil, 3–4 minutes per side until the edges char. Set aside.


- Cook the base. Sauté the onion in a little olive oil until soft, add the tomatoes, and cook 8–10 minutes.


- Make the cashew cream. Meanwhile, blend the soaked cashews with ¼ cup water until smooth — add a splash more if it’s too thick.

- Blend the base. Blend the cooked onion and tomatoes until smooth (careful, it’s hot!).

- Build the sauce. Melt the remaining 2 tbsp vegan butter (add cinnamon and cloves if using), crush in the kasuri methi, then sauté the garlic and ginger 1–2 minutes. Stir in the rest of the spices — coriander, garam masala, and cumin.


- Simmer. Pour the tomato base in through a strainer, cover partially, and boil on medium heat ~10 minutes until thick. Add the cashew cream (save a little for drizzling) plus 1 cup water or stock, and simmer 8–10 minutes.




- Combine. Add the seared chunks; if it’s too thick, add ½ cup more water. Simmer another 10 minutes.


- Serve. Drizzle with the reserved cashew cream, shower with cilantro, and enjoy over basmati rice, with naan, or both!

- Nut-free: swap the cashews for coconut cream or blended silken tofu — still creamy, slightly different flavor.
- Gluten-free: use tamari instead of soy sauce and serve with rice or gluten-free naan.
- No soy chunks? Soy curls, TVP strips, or extra-firm tofu (freeze and thaw first) all work.
