I studied gastronomy long before I went plant-based, so these had to actually taste like the tacos I grew up loving — and they do. The secret is treating the soy chunks (TVP) like real carne: soak them, squeeze them bone-dry, drown them in a smoky citrus marinade, and don’t rush the sear.

  • Soy chunks (TVP). The whole foundation. I use my own (OOE) because the texture holds up to a hard sear without going mushy. Soak until soft, then squeeze them as dry as you can — wet chunks steam instead of char, and the char is the entire point.
  • Soy sauce or tamari best to marinade always.
  • Liquid smoke. This is what makes it read as asada instead of “seasoned soy.” A little goes a long way. No liquid smoke? See substitutions.
  • Citrus — Lime brings the tang.
  • A1 / vegan Worcestershire. That deep, savory — Don’t skip it.
  • Garlic, cumin, jalapeño. Classic carne asada seasoning. Five cloves is my floor — add more if you’re like me.

Substitutions & swaps

  • No soy chunks? Soy curls or rehydrated TVP strips work — soak, squeeze, marinate the same way. Extra-firm tofu (frozen then thawed for texture) will do in a pinch, but you’ll lose some of the meaty bite.
  • No liquid smoke? Swap in an extra teaspoon of smoked paprika. Different kind of smoke, but still smoke.
  • Gluten-free? Use tamari instead of soy sauce and stick to corn tortillas — you’re set.
  • Less heat? De-seed the jalapeños fully and skip the chile flakes. More heat? Leave the seeds in and don’t hold back.
  • No A1 / Worcestershire? A splash of soy sauce plus a tiny bit of balsamic gets you close on that savory depth.

What to serve with carne asada tacos

Honestly they can carry a plate on their own, but if you’re building a spread, I lean into the rest of my high-protein Mexican-ish lineup. Pile leftovers into my Sweet Potato Taco Bowl the next day, or make it a full taco night with a side of rice and beans, pico, and guac.

What are soy chunks / TVP? Textured vegetable protein — dried soy that puffs up meaty when you rehydrate it. It’s high in protein, shelf-stable, and takes on whatever flavor you give it. My favorite base for anything that needs to feel like meat.

Can I use tofu or soy curls instead? Yes. Soy curls are the closest swap — same soak-squeeze-marinate method. Tofu works too (freeze then thaw it first for a chewier texture), but you’ll get a little less of that carne-asada bite.

Are these tacos gluten-free? They can be. Use tamari in place of soy sauce and corn tortillas instead of flour, and you’re good.

How far ahead can I marinate? 30 minutes minimum, but overnight is best! Marinated uncooked chunks keep 3–5 days in the fridge and honestly just get better.

How do I store leftovers? Cooked carne keeps about 5 days in the fridge — re-crisp it in a hot dry pan so it doesn’t go soft. You can also freeze them if making a big batch for meal prep but it’s better fresh like almost everything! — Slice your avocado day-of, always.

Ingredients

  • The chunks
  • 200 g dry soy chunks (I used my own, OOE)

  • Hot water or vegetable broth, to rehydrate

  • Smoky Citrus Marinade
  • 1/2 cup white onion, roughly chopped

  • 1/2 cup cilantro

  • 5 garlic cloves (or more if you’re like me!)

  • 2 jalapeños, de-seeded

  • 6 tbsp soy sauce or tamari if gluten allergy

  • 4 tbsp lime juice

  • 3 tbsp A1 or vegan Worcestershire

  • 20 drops liquid smoke

  • 2 tsp cumin

  • 1 tbsp chile flakes (optional)

  • 1/2 cup water (or vegetable stock)

  • 1/2 tsp black pepper

  • salt to taste.

  • To serve
  • 12 warm corn tortillas (3 per serving, 4 servings total)

  • 200 g avocado (50g per serving aka 3 tacos, sliced or mashed for guac, your call!)

  • Toppings: onion, cilantro, lime, pico, corn — whatever you’re feeling

Directions

  • Soak chunks in hot water or broth for at least 15 min, until soft. Use enough water to be fully covered, you can add a tbsp of better than bouillon vegetable base for extra flavor.
  • Squeeze very dry. Drain them, and squeeze with your hands, if it’s too hot you can rinse them with cold water.
  • Season: blend the marinade, pour it over, rest 30 minutes minimum — preferably overnight if you have the time. If marinade it’s too thick you can a bit more of water, the chunks won’t absorb it as well if it’s too thick.
  • Prepare your toppings while you wait!
  • Cook: screaming-hot skillet, 8–10 min, stirring occasionally, until browned and crispy at the edges. Add a little bit of oil if need it. Once seared, add the rest of the marinade to the pan. Don’t rush it!
  • Tortillas: dry skillet or straight over the flame until soft and pliable. I added half slice of cheese to each tortilla, optional.
  • Build right before serving — pile, avocado slices, toppings, lime. Tortillas wait for no one!

  • Meal Prep? Cooked carne keeps 5 days — re-crisp in a hot dry pan. Marinated uncooked chunks keep 3-5 days and only improve. Slice avocado day-of, always. You have all you toppings ready minus the salt, and sauce or lime. For example I left my pico ready just to add lemon, salt and pepper before serving and used store-bough roasted corn.
