Alfredo without the cream, butter, or parmesan sounds like it shouldn’t work — I know. But blend soaked cashews with a little onion, garlic, and nutritional yeast and you get a sauce so silky and rich nobody will believe there’s no dairy in it.

I studied gastronomy long before I went plant-based, so a “healthy” alfredo had to actually taste GOOD — not a sad and watery. This one hits: crispy TVP “chicken,” a velvety cashew sauce, and spiralized zucchini stretching the pasta so you get a big, cozy bowl for around 460 calories. It’s the recipe I make when I want comfort food that still loves me back.

Ingredient notes (the ones that matter)

  • Raw cashews. The magic behind the sauce. Once soaked and blended they turn impossibly silky and creamy — this is what replaces the heavy cream and cheese. Soak them so they blend smooth.
  • OOE soy chunks (TVP). Rehydrated, seasoned, and pan-crisped, these become the “chicken.” High-protein, meaty, and they soak up all that garlic-paprika seasoning.
  • Zucchini. Spiralized and mixed right in with the pasta, it stretches the dish, adds fiber, and keeps calories down — without turning it into a “zoodle” recipe. You still get real fettuccine.
  • Nutritional yeast. The secret to that cheesy, savory, parmesan-y depth. Don’t skip it — it’s what makes the sauce taste like alfredo.
  • Unsweetened soy milk. Thins the sauce to that pourable, cling-to-every-noodle consistency while adding a little extra protein. Make sure it’s unsweetened.
  • Lemon juice. A small squeeze brightens the whole sauce and cuts the richness — it’s the finishing touch that makes it taste balanced, not heavy.

How to make vegan chicken alfredo

  1. Soak the cashews. Cover with hot water for 20 minutes (or overnight), then drain. This is what makes the sauce silky.
  2. Rehydrate the chunks. Pour boiling broth over the soy chunks and soak 15 minutes until soft. Drain and squeeze out the excess liquid really well.
  3. Season & crisp. Toss the chunks with garlic powder, onion powder, smoked paprika, mustard, and soy sauce. Pan-fry with olive oil spray for 8–10 minutes until golden and crispy.

  1. Build the sauce base. Sauté the chopped onion until soft, 3–4 minutes, then add the garlic and cook one minute more.
  1. Blend. Add the cashews, onion-garlic mixture, soy milk, nutritional yeast, lemon juice, salt, and pepper to a blender and blend until completely smooth.
  2. Cook the pasta. Boil the fettuccine to al dente and reserve some pasta water before draining.
  3. Bring it together. Add the pasta, crispy chunks, and spiralized zucchini to the pan and sauté 3–5 minutes, until the zucchini is just tender.
  1. Sauce it. Pour the alfredo over everything, loosening with pasta water or a splash of soy milk until it’s creamy and coats every noodle.

  1. Finish. Season with black pepper and salt and shower with fresh parsley.

Substitutions & swaps

  • No cashews? Raw slivered almonds (soaked) or even silken tofu will get you a creamy sauce — cashews are just the silkiest.
  • Nut-free: blend with silken tofu or sunflower seeds instead of cashews.
  • Gluten-free: use your favorite gluten-free fettuccine and swap the soy sauce for tamari.
  • No zucchini? Spiralized yellow squash works, or just use more pasta if you’re not counting calories.
  • No soy chunks? Soy curls or extra-firm tofu (freeze and thaw first) both work for the “chicken.”
  • Want it richer? A tablespoon of vegan butter or a splash of oat cream stirred in at the end takes it over the top.

Pro tips for the creamiest sauce

  • Squeeze the chunks dry. Wet TVP steams instead of crisps — really wring it out before seasoning.
  • Soak the cashews properly. Under-soaked cashews leave the sauce grainy. Hot water for 20 minutes minimum, and blend longer than you think. You can skip this step if you have a high speed blender but I still do it.
  • Save your pasta water. That starchy water is how you thin the sauce without watering down the flavor — add it a splash at a time.
  • Add the zucchini last. And just sauté couple min 3-5 until tender

Storage & meal prep

Leftovers keep 3–4 days in an airtight container in the fridge. The sauce thickens as it sits, so when you reheat, add a splash of soy milk or water and warm it gently on the stove or in the microwave until creamy again. My favorite way to do this is leaving the sauce aside along with zucchini, pasta, and tvp mixed and just add it at the moment, it just takes 5min! I don’t recommend freezing this one — cashew sauces can split, and the zucchini softens too much.

What to serve with vegan chicken alfredo

Ingredients

  • TVP ”Ch*cken”
  • 120 g TVP soy chunks (40g per serving — I used mine, MEATLESS CHUNKS)

  • 3 cups vegetable broth, to rehydrate (or water, use enough to fully cover the chunks)

  • 3 tbsp garlic powder

  • 3 tbsp onion powder

  • 1 tbsp smoked paprika

  • 5 tbsp low sodium soy sauce or tamari

  • 3 tbsp yellow mustard (optional)

  • spray olive oil (for pan-frying)

  • Creamy Alfredo Sauce
  • 1/2 cup raw cashews

  • 1/2 medium sweet onion, chopped

  • 3 cloves garlic, minced (or more if you love garlic like me!)

  • 1 cup unsweetened soy milk (other plant milk could work but it might not emulsify as good)

  • 2 tbsp nutritional yeast

  • 1 tbsp lemon juice

  • 1/2 tsp salt and pepper, to taste.

  • Pasta and zucchini
  • 90 g fettuccine (30g per serving)

  • 3 medium zucchinis, spiralized

Directions

  • TVP Ch*cken
  • Rehydrate the TVP: bring the veg broth or water to a boil, pour over the TVP chunks, soak 15 min until soft, then drain and squeeze out excess liquid. I use my hands to do so, if too hot you can rinse them with cold water or wait a little longer to squeeze.
  • Season with garlic powder, onion powder, smoked paprika, mustard and soy sauce. You can add Italian seasoning or anything else you like, it’s your kitchen!
  • Pan-fry: spray with the olive oil cook the chunks 8-10 min, turning, until golden and lightly crisp at the edges. Set aside.
  • Alfredo Sauce
  • Soak cashews overnight or in hot water for 20 min (you can skip if using a high-speed blender but I still like to do it), then drain.
  • Sauté onion with splash of olive oil until soft, 3–4 min; add garlic and cook 1 min more.
  • Blend cashews, onion–garlic, soy milk, nutritional yeast, lemon juice, and salt until completely smooth.
  • Bring it together!
  • Cook the fettuccine al dente. (save some pasta water in case you need it later to thin the sauce)
  • Combine: the TVP chunks, pasta and zucchini. Sauté 3-5min until the zucchini is tender.
  • Add the sauce! loosening with a good splash of pasta water or soy milk until it coats everything silkily (this sauce runs thick — don’t be shy). Stir through.
  • Finish with black pepper, salt, and fresh parsley.

  • Tips & make-ahead
    -Squeeze the TVP well after soaking — drier chunks brown and crisp far better.
